高知県の郷土寿司の一つです。
高知県では『ヒメジ』のことを『ヒメイチ』と呼びます。
ヒメイチは体が赤く、上品な白身魚で、
昔から鯛の代用品としてお祝い事に使われることもあります。

In Kochi , the himeji fish（Japanese goatfish）is commonly referred to as himeichi.
The himeichi fish is a red-bodied fish with refined white flesh.
Since ancient times,it has been used in celebrations as a substitute for tai（sea bream）.
